Grate the potatoes and onion onto a clean dish cloth and twist into a roll so the cloth soaks up all the potato juice. Lay onto a microwave safe plate and microwave for 2 minutes.
Sprinkle Potato spice onto the potatoes and mix together. Let cool.
Once cooled, transfer into a mixing bowl, add Maizena and the egg. Mix.
Warm canola oil about 1 cm deep in a big non-stick frying pan, Turn stove to medium/high.
Drop away from you and flatten about 1 Tblsp of the potato mixture into the oil, spacing the pancakes well apart. Turn when browned. Complete cooking on the other side.
Put Paper towel on a baking sheet and let it soak up the oil of the potato pancakes. Serve immediately with smooth cottage cheese and Chilli Chutney. Enjoy.
