Buttermilk Rusk with Raisin
Awesome, healthy, delicious. i do not feel bad about letting my kids snack on these! Almost easier to make then to buy and better for you! Keep in mind they do take 45 Minutes to cook but also another Hour and a half to dry out. So make sure you start this recipe when you have the time!
1 Packet Ina Paarmans Vanilla Cake Mix
3 Cups All-bran Flakes
2 Cups Rolled Oats
1 Cup Raisins
1/2 Cup Walnuts/ Almonds/ Sunflower seeds (What ever you have/like and has a crunch to it)
1 Cup Melted Butter
1/2 Cup Canola Oil
2 Cups Buttermilk
2 Large Eggs
First We Prep
Pre heat oven to 355 F. Take a deep baking pan and line it with baking paper.
Add the Vanilla Cake Mix, All Bran Flakes, oats, raisins and whatever nut you chose together in a big bowl.
Melt the butter in a large measuring jug (Whatever is big enough to hold the liquids). Add the oil, buttermilk and eggs. Whisk.
Pour liquids onto the dry mixture. Stir until it is all combined but not over mixed!
Then We Bake
Pour Mixture into your prepared pan. Bake for 45 minutes.
Now We Dry
When The 45 minutes are over, take them out of the oven and let them cool. Turn the oven down to 212 F.
Break/ cut rusks into the rusk shape. lay out on a oven safe Cooling rack on top of a baking tray and put back into the oven for 1 1/2 Hours.
Take it out and leave them to cool out completely. Then you will be able to enjoy what you made!
