Ingredients

  • 4 slices of bread (white or brown)
  • 1 cup grated cheese (cheddar works great)
  • 1 medium onion, thinly sliced
  • 2 tablespoons chutney (apricot or tomato)
  • Butter (for spreading)
  • Salt and pepper to taste

Instructions

  1. Caramelize the Onions:

    • In a skillet, melt a bit of butter over medium heat. Add the sliced onions and cook until they’re golden and caramelized, about 10-15 minutes. Season with salt and pepper. Set aside.
  2. Prepare the Bread:

    • Spread butter on one side of each slice of bread.
  3. Assemble the Sandwich:

    • On the unbuttered side of two slices, layer cheese, a spoonful of chutney, and caramelized onions. Top with the other two slices, buttered side up.
  4. Grill:

    • Place the sandwiches on a hot grill or in a skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
  5. Serve:

    • Cut in half and enjoy your delicious Braaibroodjie hot off the grill!
